The cheeseball who beat out the guacamole on the buffet


Yes – a cheeseball – a much underestimated – yea – even maligned – precursor to a meal.

I love guacamole.  I love anything with avocado in it.  And Becky makes a mean guacamole.  But her cheeseball is just the best – and she shared her recipe with me and I am so nice that I am sharing it with you too.  This is a keeper!!  Really!!

The recipe is (cut and pasted from Becky’s post to me with the recipe):

1 small pepper (I like red for the
contrast)

1 small sweet onion

1 small can crushed pineapple

2 bricks of cream cheese

chop the onions and peppers up (I know that Jesse likes to do that with the
chopper)

drain off most of the juice from the can of pineapple

mix all the ingredients together.  I roll it into a ball with plastic wrap.
Refrigerate for an hour. serve with wheat thins cause they have a sweet side
with the saltiness!  🙂

Okay, now you all owe me – and I owe Becky – Big Time!!

    Bill’s Mom, Dora, gave me the recipe last Thanksgiving and I have not looked back. I put that on every buffet now. As all of my friends: “Hmmmm…. Cheese Ball!” 🙂
